Steps:
- Place liner in slow cooker, if using. Place roast in slow cooker and season each side with your preferred seasoning blend. Set slow cooker on high.
- Add carrots and onions around the roast. Place lid on cooker. * NOTE: Omit the carrots if you don't care for carrot flavor in your gravy.
- In a medium bowl, whisk together 1/4 cup all purpose flour and one can of onion soup until no large lumps of flour remain; add remaining can of onion soup, whisking until well combined.
- Pour soup mixture over roast and vegetables in slow cooker.
- Place whole peeled potatoes around roast (on top of carrots and onions.) Sprinkle with salt and pepper to taste. Place lid on slow cooker. Cook on high for about 5-6 hours, or on low for 8 hours (times are approximate and depends on size of roast and how hot your slow cooker gets.)
- Serve hot, preferably with warm dinner rolls to sop up the gravy. Cover and refrigerate leftovers.
