Easy Pot Pie image

My family thoroughly enjoyed this for dinner. I love the fact that the crust in made with whole wheat flour and that there are no canned soups in the filling. I got this recipe from Graham Family Ministries website.

Number Of Ingredients 16

FILLING
2 tablespoon(s) dry minced onion
1/4 teaspoon(s) garlic powder
1/2 cup(s) whole wheat flour ( i use freshly ground)
2 cup(s) chicken broth
2 cup(s) milk
2-3 cup(s) cooked, chopped chicken
1 pound(s) frozen mixed vegetables(peas, carrots & corn)
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
CRUST
1 1/2 cup(s) whole wheat flour ( i used freshly ground)
2 1/4 teaspoon(s) baking powder
3/4 teaspoon(s) salt
1 1/2 cup(s) milk
1/2 cup(s) butter melted

Steps:

  • Saute the flour, onion & garlic powder in some olive oil or butter for a few minutes.
  • Gradually stir in the milk & broth using a whisk to break up lumps.
  • Stir until the mixture boils allowing mixture to boil for 1 minutes.
  • Stir in the chicken, vegetables, salt & pepper.
  • Pour this mixture into greased 13x9 baking dish or into 2 round, glass pie plates.
  • In a blender combine the crust ingredients.
  • Pour over filling making sure to cover it completely.
  • Bake it at 350' for about 45 minutes or until golden.
