This easy no-bake recipe for Polish wafer mazurka or mazurek na waflu is made with purchased torte wafers. This dessert can be even easier if you use canned frosting, but the taste will be different. This mazurek is allowed to set in the refrigerator overnight before frosting. It's ideal for Easter because the iced top makes a perfect canvas to write Alleluja! or Wesolych Alleluja!, loosely translated as "Happy Easter." Read more about Polish mazurek. Steps:
- Place 1 wafer on a flat serving plate or cake board that will fit in your refrigerator. Spread with a thin layer of jam. Cover with another wafer, press down gently and spread on a thin layer of white icing. Cover with another wafer, press down gently and spread on a thin layer of jam. Cover with another wafer, press down gently and spread on a thin layer of white icing. Cover with last wafer and press down gently.
- Place parchment or waxed paper on top and weight wafers down with a heavy book. Place in refrigerator overnight.
- Just before serving, cover top and sides with chocolate icing. If desired, decorate edges with sliced almonds. If it's Easter time, write Alleluja or Wesolych Alleluja! with leftover white icing on top of torte.
