EASY OVEN BAKED RISOTTO image

Number Of Ingredients 8

2 cups arborio rice
5 cups chicken stock
2 tb margarine
3 cups sliced mushrooms
2 cups baby spinach opt.
½ cup finely grated parmesan cheese opt.
2 tablespoons chopped chives, or herbs of choice
¼ cup pinenuts opt.

Steps:

  • 1.Combine rice, stock, margarine and mushrooms into a large oven-proof dish. 2.Cover dish tightly with lid. 3.Bake at 400°C for 30 minutes or until rice is tender. 4.Stir through spinach leaves, parmesan, chives and nuts.
