Easy Meat Cakes image

So easy and delicious. I like the tartar sauce with the fish and seafood. I like salsa with the chicken and beef. Use your own ideas and have fun.

Number Of Ingredients 9

1 pound(s) cooked meat (see suggestions below)
8 - ritz or saltine crackers
1 medium egg
1 tablespoon(s) mustard (spicy or your choice)
1 tablespoon(s) plain yogurt or mayonnaise
1 pinch(es) cayenne pepper
1 pinch(es) salt (or more)
1 pinch(es) black pepper (or more)
1 tablespoon(s) olive oil

Steps:

  • NOTE: Use crabmeat, tuna, chicken, salmon, beef - your choice for the meat. Make sure meat is pre-cooked and flaked or shredded small. Mix all ingredients except the oil. Heat a skillet on medium heat and add olive oil. Form the mixture into small patties -about 5 to 6. Place the patties in the heated skillet and cook about 3 or 4 minutes on each side until golden brown. Drain on paper towels. Serve with ketchup, tartar sauce, salsa, etc. Double or triple recipe if needed.
