Easy Lemon Cake Pudding... image

This was the first custard I have ever tried to make. Came out good. Was so good I never got to try it lol...

Number Of Ingredients 8

1 c sugar
1/4 c cake flour
1/8 tsp salt
3 eggs, separated
1 1/2 c milk, scalded
2 Tbsp vegetable oil
5 Tbsp lemon juice, fresh
2 tsp lemon rind, grated

Steps:

  • 1. Heat oven to 325F. Lightly grease & flour custard cups.
  • 2. Sift together dry ingredients in large bowl.
  • 3. Beat egg whites with the sugar until sift peaks & glossy.
  • 4. Combine wet ingredients to flour mixture. Fold in egg whites. Make sure not to over fold.
  • 5. Pour into custard cups, set in pan of hot water & bake for 45 mins.
  • 6. Let cool.
