This is one of the recipes I created for using up that leftover holiday turkey. After several days of the traditional leftovers, your taste buds will appreciate the switch to the south-of-the-border flavors in these yummy little cheesy turkey fajitas.

Steps:
- Gather and prep all ingredients.
- Heat oil in large skillet over medium heat; add onions and peppers' saute until peppers are tender-crisp.
- Stir in taco seasoning mix and water; add turkey. stirring until coated with taco seasoning sauce.
- Cover, reduce heat to low/ medium-low and let simmer while preparing tortillas.
- Place a tortilla in a medium skillet over medium heat; sprinkle 1/2 cup cheese over tortilla.
- When cheese begins to melt, add 1 slice of tomato or equivalent amount of chopped tomato.
- Spoon some of the turkey mixture over tomatoes (about 1/6 of the mixture.)
- Remove from skillet to serving plate; scatter lettuce on top.
- Add a dollop of sour cream and a spoonful of salsa on top of the lettuce (and sliced olives, if using.) Serve.
