Easy Italian Soup image

Easiest soup I've ever made, very quick and easy.

Number Of Ingredients 10

2 eggs, beaten
1/4 c bread crumbs, dry
3/4 can(s) carrot, diced
1 c seashell pasta
2 c spinach, thinly sliced and packed
2 1/2 c chicken broth
1 lb extra lean ground beef
1 tsp basil, dried
2 Tbsp parmesan cheese
3 Tbsp onions, minced

Steps:

  • 1. Combine beef, egg, bread crumbs, cheese, basil, and onion. Shape mix into 3/4 inch balls; set aside.
  • 2. In large pot heat on high: chicken broth to a boil, stir in spinach, pasta, carrot and meatballs.
  • 3. Boil, reduce to medium heat. Cook, stirring frequently at a slow boil for 10 minutes or until pasta is el dente and balls are no longer pink.
  • 4. Serve hot, sprinkle with cheese.
