This is a quick meal for any time of the day. Simple and delicious. The recipe is for one serving, but you may multiply, if desired. For St. Patrick's Day, swap corned beef for the ham. So good!

Steps:
- Melt grease or butter in medium skillet over medium heat.
- Add onions; saute until translucent.
- Add potatoes and a generous pinch of pepper and salt; cook over medium-medium-high heat until potatoes begin to brown, turning mixture over in pan occasionally to promote even browning.
- Add ham; lower heat to medium; cook about 1 to 2 minutes, until ham is heated through and begins to brown slightly.
- Remove from heat and serve immediately (sprinkle with chives, if desired.)
- Recipe may be doubled, tripled etc...
