EASY GUMBO image

This is my version of Gumbo. Simple & easy, but delicious. Even easier if you use a rotisserie chicken from your supermarket. I hope you enjoy.

1 pkg keilbalsa smoked sausage
2 c cooked & shredded chicken
2 c large frozen shrimp, thawed
1 onion, chopped
1 pkg frozen cut okra
1 can(s) ro tel tomatoes
1 can(s) stewed tomatoes
4 can(s) chicken broth
2 c minute rice
1/2 tsp cayenne pepper
2 tsp minced garlic

Steps:

  • 1. Cut sausage into 1/4 inch pieces. Place sausage & onion in soup pot with a little oil & stir fry a few minutes until sausage is browned & onions are tender.
  • 2. Add chicken broth & rice to pot. Bring to a boil for about 10 minutes.
  • 3. Add tomatoes, okra, chicken, cayenne pepper & garlic. Mix together well. Simmer for about 10-15 minutes. Add more garlic or cayenne if you want more. Also, add more chicken broth if you want it more soupy.
  • 4. Stir in thawed shrimp. Let simmer 5-10 minutes. NOTE: I use the precooked shrimp. If you cook shrimp too long, it will be rubbery. Taste even better as leftovers the next day. Yummy with cornbread, hushpuppies or hoe cakes.
