Steps:
- For the broth In a large pot heat the olive oil. Add the onion, ginger and cinnamon stick. Cook for about 5 minutes. Add the stock, water, star anise, cloves, fish sauce, and sugar. lower the heat and simmer for 1 hour.
- Strain the broth and discard the solids. Cook the rice noodles according to package directions. Drain
- Add a little oil to a pan and cook the shallots for about 3 minutes.
- Divide the noodles among the bowls. Top with the shallots, raw rib eye, bean sprouts, mint, basil and cilantro. Pour the steaming hot broth over top. The broth will cook the meat. Serve immediately with lime wedges
