EASY AU GRATIN POTATOES image

Yield 4-6 servings

Number Of Ingredients 11

3 lb potatoes
1 T each: Butter and ev olive oil
1 onion, chopped
6 garlic cloves, minced
1/2 jar alfredo sauce
1 1/2 cup grated cheddar cheese
1 tsp dried thyme
salt and pepper to taste
parmesan cheese (for topping)
bell pepper, chopped (optional
1/2 cup half and half

Steps:

  • saute onion and garlic in butter/evoo. Add thyme til fragrant. Then add alfredo sauce and set aside. Butter baking dish, layer potatoes, cover with alfredo/onion mixture. Layer with grated cheese, and salt and pepper. Repeat with top layer. Sprinkle on parmesan cheese, and cover with foil. Pour half and half over mixture. Bake at 350 for one hour. (keep testing potatoes until well cooked.) ( I add the bell pepper to make breakfast potatoes. Then I cut them into 3" squares when cool, and freeze. I take them out the night before to thaw, chop the mixture up in a microwaveable Tupper bowl, and add sliced green onions and chopped tomatoes, and then reheat. Yum, Yum!)
