Durango Meatballs image

Yield 4 - 5 dozen meatballs

Number Of Ingredients 9

1 pound ground pork and 1 pound ground round, ground together
2 cups soft bread crumbs
2 eggs
1/2 cup finely chopped onion
2 tablespoons chopped parsley
2 teaspoons salt
2 tablespoons butter
1 (10-ounce) jar apricot preserves
1/2 cup barbecue sauce

Steps:

  • Combine meat, bread crumbs, eggs, onion, and seasonings; mix lightly. Shape into medium-size meatballs and brown in butter. Place in a casserole and pour the apricot preserves and barbecue sauce over the meatballs. Bake at 350° for 30 minutes.
