DROP BISCUIT BLACKBERRY COBBLER image

Yield 7 to 10 servings

Fruit filling:
7 cups fresh blackberries
1 cup sugar
2 tsp. cornstarch
1 Tbs. lemon juice
Crust:
3 cups all-purpose flour
1 ½ cups sugar
2 tsp. baking powder
1 ½ tsp. Salt
1 cup butter (2 sticks)
1 cup boiling water
Turbinado sugar

Steps:

  • Combine blackberries, sugar, cornstarch, and lemon juice in a mixing bowl. Gently stir the berries to coat. Spoon the berries into individual ramekin baking dishes and bake for 10 minutes in a 425º oven. To make the biscuit topping, whisk together flour, sugar, baking powder, and salt. Cut butter into the dry ingredients. Add 1 cup boiling water. Mix together. Drop a spoonful of the biscuit topping onto the baked berries. Sprinkle with Turbinado sugar to give it some crunch. Put the ramekins back in the oven for 15 to 20 minutes at 425º. Bake just until golden-brown and the fruit is bubbling. Allow the cobblers to rest for about 45 minutes.
