DRESSING FOR COOKED PRAWNS image

Number Of Ingredients 9

1 garlic
2 t dijon
4 T red wine vinegar
2/3 c o oil
3 T fresh basil chopped
1 red onion, thinly sliced
12 oz cooked prawns
1 can artichoke hearts
lettuce

Steps:

  • Chop garlic and crush it with 1 tsp salt. Mix garlic and mustard to a paste. Beat in the vinegar and finally the o oil for a thick dressing. Add basil then onion. Let stand 30 min at room temp, the add prawns and chill for 1 hour. Drain artichoke hearts and halve. Spread them over a bed of lettuce, then add prawns and their marinade. Serve immediately.
