DRESSEL'S PORCHETTA SANDWICH image

1 Pork Butt, boned and filleted out flat
Extra virgin olive oil
Chopped garlic
Chopped rosemary
Chopped parsley
Chopped sage
Salt and pepper
Lemon Zest
Orange Zest
Red Pepper Flakes
Fennel Seeds
Butter and Olive Oil
More chopped garlic
Rapini
Red Pepper Flakes
1/2 can of beer
Sliced Pepperocini
Grated Provolone
Grated Gruyere
Grated Swiss
Sliced and toasted crusty rolls

Steps:

  • Lay out butt. Smear with generous amount of EVOO. Sprinkle generous amounts of all other ingredients over pork butt. Roll the butt and tie it. Sprinkle outside generously with more salt and pepper. Roast, fat cap on top, in 350 degree oven for 3 to 4 hours. Let cool 15 minutes and then remove string and slice down. Heat together a couple tablespoons of olive oil and butter. Saute chopped garlic, rapini, and red pepper flakes. Pour in 1/2 can of beer. Add sliced meat and pepperocini and saute until warm. Add grated cheeses. Cover pan and steam until cheese melt. Serve hot over warm crusty rolls.
