DREAMY CHOCOLATE STREUSEL COFFEE CAKE image

Chocolate coffee cake? Never heard of such a thing, but it just has to be yummy and decadent. Not to mention giving you an excuse to eat chocolate for breakfast! Recipe & photo from: http://www.bettycrocker.com

COFFEE CAKE:
1 1/2 c all purpose flour
3/4 c granulated sugar
1 tsp ground cinnamon
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 c firm butter, cut into pieces
2/3 c buttermilk
1 egg
1 tsp vanilla extract
STREUSEL:
1/4 c all purpose flour
1/4 c packed brown sugar
1 Tbsp baking cocoa (unsweetened cocoa, the same thing you would use to make hot cocoa)
2 Tbsp butter, softened
1/4 to 1/2 c miniature semi-sweet chocolate chips

Steps:

  • 1. In a large bowl, combine 1-1/2 cups flour, sugar, cinnamon, baking powder and soda, and salt until well mixed. Cut in the butter, using a pastry blender (or pulling 2 knives through ingredients in opposite directions) until mixture is crumbly. Add buttermilk, egg and vanilla. Beat with electric mixer on medium speed for 1 minute. Spread in an 8-inch square pan that has been greased on the bottom only.
  • 2. In a small bowl, mix all the streusel ingredients, except the chocolate chips, with a fork until mixture is crumbly. Sprinkle over batter and then sprinkle with chocolate chips. Recipe calls for just 1/4 cup chips, but I think 1/2 cup would be better. Use your own judgement, depending on how much chocolate you like.
  • 3. Bake in a preheated 350-degree oven for 35 to 45 minutes, or until toothpick inserted near center comes out clean. Cool for 30 minutes and serve warm.
