My grown granddaughter, Tara laughed her head off when she saw my old yellowed, butter stained recipe card from when I was about 14!! LOL So of course we HAD to make these bars! We of course took pictures (she's the techie). Everyone ohhed and ahhed and closed their eyes as they ate them!! Hope you love them too!

Number Of Ingredients 12

1/2 c butter, room temperature
1 c brown sugar, firmly packed
1 1/2 c coconut, shredded
1 c all purpose flour, sifted
1/2 tsp salt
PINNEAPPLE FILLING
1 c pineapple, crushed with juice
3/4 c sugar
3 Tbsp cornstarch
1/4 tsp salt
1 Tbsp butter
1 Tbsp lemon juice, fresh

Steps:

  • 1. Heat oven to 350. Butter and flour 9" square pan.
  • 2. Cream together butter and sugar; add coconut, flour and salt; mix until crumbly. Press 1/2 of crumb mixture firmly in 9" pan.
  • 3. Pinneapple Filling: In a sauce pan, mix together pineapple, sugar, cornstarch and salt; bring to a boil. Cook until thickened and clear (about 5 minutes), stirring constantly. Remove from heat; blend in butter and lemon juice; cool slightly.
  • 4. Spread filling evenly over crumb mixture.
  • 5. Cover with remaining crumb mixture; press top layer down firmly (it will feel giggely). Bake 35 minutes in middle of oven.
  • 6. ENJOY!!! HAPPY DREAMING!
