Steps:
- Melt butter, simmer shallots until translucent. Add carrots and celery. Simmer for an hour until completely tender. Add tomato paste, chervil, thyme, mushrooms; simmer until mushrooms are soft and cooked through. Sprinkle with Wondra until thick paste is formed. Cook for 5 minutes. Add consomme and madeira to taste, stirring until well -blended and thickened.
