Steps:
- Place oats in a medium-sized bowl, and stir in sugar, flax meal, salt, and 1/2 of the chocolate chips. Over a double boiler, melt the remaining chocolate and butter. Set aside to cool a little, and then add the egg and vanilla, stiring well to incorporate. Stir this into the oat mixture, mixing with your hands or a large wooden spoon to work in the ingredients. Form into a large ball of dough and chill for about 20 minutes while you preheat oven to 350 degrees. Line cookie sheet with silpat. Form the chilled dough into 1-inch balls and flatten down on the baking sheet. Bake for about 15 minutes.
