Dirty Chicken and Rice image

I usually make recipes from scratch, but had to try this, it called for hamburger but I used boneless skinless chicken. My husband and I both loved it!

Number Of Ingredients 7

2 tablespoons olive oil
1/2-1 lb boneless skinless chicken
1 medium onion, diced
1 medium red bell pepper, diced
1 stalk celery, diced
1 (5 2/3 ounce) package dirty rice
2 cups water

Steps:

  • Heat 2 Tbsp olive oil in 12-inch nonstick skillet over medium-high heat, add chicken and brown, stirring occasionally.
  • Stir in onion, red pepper and celery. Cook, stirring occasionally, 3 minutes or until veggies are crisp-tender. Stir in Dirty Rice and cook, stirring frequently, until rice is lightly toasted, about 2 minutes.
  • Add water and bring to a boil over high heat. Reduce heat to low and simmer covered until rice is tender, about 7 minutes.
