Diabetic Wheat Bran Cranberry Quickbread image

This is very adaptable to change. You can use pretty much any dried or firm fruits according to what you have on hand.

Number Of Ingredients 13

1/2 cup(s) unbleached white flour
1 cup(s) whole wheat flour
1 cup(s) natural wheat bran (not cereal from a box)
6 tablespoon(s) splenda brown blend
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) sea salt or substute
1/2 cup(s) walnut pieces
1 cup(s) cranberries, fresh or frozen (if frozen do not defrost)
1 - egg or 2 egg whites
1/2 cup(s) low or fat free milk
1 cup(s) pure unsweetened orange juice
1/3 cup(s) canola oil

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together the egg, milk, orange juice and oil. In a separate bowl, combine flours, bran, splenda's, baking powder, baking soda, salt, walnuts and cranberries. Add dry mixture into wet and mix until just combined.
  • Pour into a greased 9x5x3" loaf pan. Bake for 55-60 minutes, or until the bread is firm in the center. Cool in pan 10 minutes, remove to rack and cool before slicing.
