Diabetic Summer Strawberry Cake image

Found this recipe online and modified for my husband who has diabetes.

Number Of Ingredients 6

1 sugar free yellow cake mix
1 box sugar free strawberry jello mix
1 c olive oil, extra virgin
1/2 c skim milk
1 c egg beaters
1 c mashed unsweetened strawberries with 1 tablespoon splenda mixed in

Steps:

  • 1. Mix all ingreditents together and pour into a 9X13 cake pan. Bake at 350 for 35 to 40 minutes. Garnish with sugar free cool whip and fresh strawberries.
