Delta Bars image

I've never known anyone to make these outside our family. I don't know why they're called Delta Bars. I do know that they are really good and are a crowd pleaser. I've seen one similar recipe but there are differences and I think this one is better ... of course.

DOUGH:
1/4 c shortening
1 c sugar
1 large egg
1 egg yolk
1 tsp vanilla extract
1 1/4 c self rising flour
TOPPING:
1 egg white
1 c brown sugar, firmly packed
1 c pecans, chopped

Steps:

  • 1. For the dough: Cream shortening and sugar together; add egg, egg yolk and vanilla. Add flour and mix well.
  • 2. Press evenly into a greased 13x9 inch baking pan (dough will spread thin).
  • 3. For the topping: beat egg white until stiff peaks form. Fold in brown sugar. Sprinkle pecans over topping.
  • 4. Bake at 325 degrees for 25-30 minutesw or until dough is done.
  • 5. Cool and cut into squares.
