Steps:
- Melt butter in the bottom of a pot. Add shallot, onion slices and garlic to butter. Sauté on low heat until onions are golden. Add mushrooms. Toss until well coated with onions, butter, garlic and shallots. Add wine. Simmer until it has cooked down a bit, then add Chicken stock and lemon juice. Cook down until the mushrooms are cooked through and the stock has a lemon-mushroom taste, about 10 minutes (maybe). When soup is cooked down to your desired flavour strength, add green onion slices, thyme and salt and pepper to taste. When soup is finished, should be light and lemony, but with mushroom undertones. Should be thick, with a higher ratio of mushrooms to broth. This really depends on taste, as some may like it with more broth.
