1/2 cup unsalted butter, softened
8-10 dates, pitted and finely chopped
1/3 cup fresh lemon juice
1 tablespoon fresh lemon zest
2 tablespoons extra-virgin olive oil

Steps:

  • Mix everything together well. Roll into a log for storage, and remember to keep it air tight. This freezes very well.
