2 tablespoons vegetable oil
1/2 onion
1 tablespoon curry powder
1 tablespoon cumin
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon pepper
2 minced garlic cloves
1 teaspoon ginger
2 tablespoons ketchup
1 cup red lentil, washed
4 cups water

Steps:

  • On medium-high heat, sauté onions in oil until soft (about 4 minutes).
  • Add everything except the lentils and water. Cook out bitterness of dried spices for 1-2 minutes.
  • Add lentils and water.
  • Simmer on medium heat for 25 minutes, stirring occasionally.
  • Enjoy with rice or on its' own.
