2 1/4 cups water
1 cup uncooked long grain rice
1 tablespoon margarine
1 teaspoon salt (optional)
1 cup frozen peas, thawed and cooked
1 cup thinly sliced celery
4 green onions, sliced
1/2 cup mayonnaise
1/2 cup chutney
1 teaspoon curry powder

Steps:

  • In saucepan put water, rice, margarine and salt; bring to a boil.
  • Reduce heat; cover and simmer 20-25 minutes.
  • Cool.
  • Add peas, celery and onions.
  • In small bowl combine mayonnaise, chutney, and curry powder.
  • Add to rice and stir well.
