Curried Peanut Rice image

Great alternative to plain rice. I serve this with chicken, fish or pork.

Number Of Ingredients 7

2 Tbsp vegetable oil
1/4 c sliced green onions
2 tsp curry powder
1 can(s) condensed chicken broth
1/2 c frozen peas
1 1/4 c uncooked rice
1/2 c coarsely chopped unsalted peanuts

Steps:

  • 1. In 2 quart saucepan over medium heat, in hot oil, cook onions and curry powder until onions are tender, stirring occasionally.
  • 2. Add broth and peas. Heat to boiling. Add rice. Remove from heat. Cover; let stand 5 minutes or until most of the liquid is absorbed. Stir in peanuts. Fluff with fork before serving. Makes about 2 1/2 cups.
