CURRIED CHICKEN AND APPLE STEW image

Yield large bowls

Number Of Ingredients 16

1 1/2 lb. boneless chicken breast, cooked and cubed
4 medium red and/or green crisp-tart cooking apples (such as braebern) CORED AND CHOPPED
1 TBL cooking oil
1 large onion,chopped
3-4 garlic cloves, minced
2 TBL curry powder
48 oz. cans reduced salt chicken broth
Spike to taste
Salt to taste
Pepper to taste
6 oz. peeled baby carrots, chopped
2 celery stalks, sliced
2 cups butternut squash, peeled, seeded and cubed
6 oz. reduced fat chive & onion flavored cream cheese
4 tsp. frozen, chopped cilantro
OPTIONAL: crumbled bacon for topping (I use reduced fat cream cheese and turkey bacon for a healthy version)

Steps:

  • Heat oil in large pot. Add chopped apples & onion,cook until onions are soft. Add garlic and curry powder;cook for another 2 minutes. Add broth, spike, salt & pepper. Bring to boiling; reduce heat. Add carrots, celery, and squash rest of apples. Simmer, covered, 30 min, stirring occasionally. Heat cream cheese for approximately 30 seconds in microwave. Stir in chicken,cream cheese and cilantro. Serve with bacon topping if desired.
