MOM'S RED VELVET CAKE image

Number Of Ingredients 14

Cake:
1 cup oil
2 cups sugar
2 eggs
3 Tbsp cocoa
2 oz. Red food coloring
1 tsp vanilla
2 cups self-rising flour
(OR 2 ¼ cups all-purpose flour, 2 tsp baking soda, and 2 tsp salt)
1 cup buttermilk
Frosting: (You may want to double this)
1 stick margarine
8 oz. Cream cheese
1 box confectioners sugar (3 ¾ cups)

Steps:

  • Cake: Mix all ingredients together until mixture is smooth. Pour into 9" round cake pans and bake at 350 for approx. 30-35 minutes. Frosting: Mix margarine and softened cream cheese until smooth. Add conf. Sugar and mix well. You may have to add a little milk to make it the consistency to spread. Spread on cake when cool.
