Curried beef-stuffed acorn sqyash image

I like serving squash dishes in the Fall when the vegetables especially all squashes are sold by size and not weight.

Number Of Ingredients 12

3 - medium acorn squash {about 1 pound each}
1 lb - lean ground beed
1/2 cup(s) chopped onions
3 - cloves minced garlic
1/2 cup(s) water
1/2 cup(s) cooked rice
2 tablespoon(s) orange juice
2 tablespoon(s) brown sugar1
1 teaspoon(s) curry powder
2 tablespoon(s) chopped fresh parsley
- salt and pepper to taste
2 tablespoon(s) beef granules

Steps:

  • Cut squash in half remove seeds..invert squash on a greased baking pan bake uncovered at 350F for 35 to 40 minutes or until almost tender.
  • In fry pan add meat and cook til no longer pink,,breaking it into pieces add onions, garlic and mushrooms and cook til tender....mix in the beef granules which have been mixed together with 1 tablespoon cornstarch and the water..cook 5 minutes more add rice and mix til combined.
  • Fill each shell with filling place in baking pan and add hot water to depth of 1/4 inch..cover with foil and bake at 350F for 20 to 30 minutes or til tender
