Cuban Citrus Garlic Sauce image

This can be served with grilled pork, chicken, seafood and vegetables.

1/2 c olive oil, extra virgin
8 clove large garlic, sliced thinly
1/2 c fresh lime juice
3 Tbsp fresh grapefruit juice
1/3 c water
1 tsp ground cumin
1/2 tsp ground oregano
1 tsp salt, or to taste
1/2 tsp black pepper
3 Tbsp chopped fresh cilantro or flat-leaf parsley

Steps:

  • 1. Heat oil in medium sized saucepan over medium heat. Add garlic and cook until fragrant and golden. Do not overcook garlic will become bitter.
  • 2. Stir in juice, water, cumin, oregano, and salt and pepper.
  • 3. Bring to a full boil. Check for seasoning and let cool until reaches room temperature.
  • 4. Store in refrigerator tightly closed.
