CRUNCHY ROASTED ROSEMARY POTATOES image

6 - 8 large Yukon Gold Potatoes cut into quarters lenthwise
4 sprigs fresh rosemary
kosher salt
freshly ground black pepper
extra virgin olive oil

Steps:

  • Preheat oven to 375 degrees. Toss potatoes in large bowl with oil and seasonings. Put on baking sheet. Remove from oven after 30 minutes and toss (adding more oil if dry). Continue to roast until they are browned and cooked through about 30 to 40 minutes longer. Serve immediately. I cleaned the potatoes a couple hours ahead and put them in a bowl of water until ready to use them. Xmas 2007 very good.
