Crunchy Granola image

Number Of Ingredients 10

1 cup oats quick cooking
1/2 cup whole bran cereal
1/2 cup whole wheat flour
1/4 cup coconut flaked
1 tablespoon almonds chopped
3 tablespoons safflower oil
2/3 cup honey
1 teaspoon vanilla extract
1/2 teaspoon imitation maple flavoring
1/4 cup raisins

Steps:

  • Heat oven to 300 degrees. Mix oats, bran cereal, flour, coconut, and almonds in a mixing bowl. Spread mixture evenly in the bottom of a 9 x 13 x 2 pan sprayed thoroughly with nonstick cooking spray. Heat oil and honey in a one-quart saucepan over medium heat, stirring constantly until bubbly stir in vanilla and Mapleine. Pour honey mixture over oat mixture and mix thoroughly. Bake until light brown, 30 to 35 minutes. Stir in raisins and cool 15 minutes. (This recipe is high in "good," cholesterol-fighting fat.) *If you are diabetic, replace 2/3 cup honey with 1/3 cup apple-juice frozen concentrate and 1/3 cup pineapple-juice frozen concentrate--use more or less to taste.
