CROUSTADE OF MUSHROOMS image

Yield 4-6 people

Number Of Ingredients 11

3 oz flaked almonds (flaked in a food processor)
3oz fresh wholewheat bread crumbs
3oz ground almonds (or other finely ground nuts)
1 small onion
1 garlic clove, crushed
3 1/2 oz softened butter
salt and freshly ground black pepper
1 lb of mushrooms, washed and sliced
10fl oz sour cream
freshly grated nutmeg
paprika

Steps:

  • 1. Preheat the oven to 350F 2. Reserve a few of the flaked almonds for garnishing. Mix together the breadcrumbs, ground and remaining flaked almonds, onion, garlic and 3 oz of the butter. Season well with salt and pepper. The mixture shoud hold tgoether like a crumbly pastry. 3. Press the mixture into the base of a 8" loose-bottomed flan tin. Bake for 20mins, until golden-brown and crisp. 4. Meanwhile, fry the mushrooms in the remaining butter for 15-20 mins, until all the liquid has evaporated. Season with salt and pepper. 5. Spoon the mushrooms on top of the croustade. Stir the sour cream with a fork, season with salt, pepper and nutmeg, then swirl abut half the sour cream on top of the mushrooms so that some show through the cream. Sprinkle with Paprika. 6. Return the croustade to the oven for 10-15 mins to heat trhrough, then remove from the tin and serve on a warmed plate. Scatter reserved flaked almonds over the top. Serve the rest of the sour cream separately in a small bowl or jug.
