Crock Pot, Savory, Garlic, Sour Cream Chicken image

Another dish I just threw together one day, with things I had on hand in the pantry...the sauce is so good as a gravy over mashed potatoes, or rice. This is what for dinner tonight, at my kids request! The chicken will melt in your mouth..

8 - skinless, boneless chicken thighs, or 4 large chicken breasts
1 - 10 oz cream of chicken soup
1 - 10 oz cream of mushroom soup
1/2 cup(s) chicken broth
3/4 - 1 cup(s) sour cream, depending how much you like. i use a cup, we like the tang
6 - garlic cloves smashed
1 large onion, sliced
1 teaspoon(s) garlic powder
- salt and pepper to taste
1 tablespoon(s) fresh or dried parsley

Steps:

  • Slice the onion into thin slices, layer on the bottom of a sprayed crock pot..then smash the cloves of garlic and throw them in with the onions.
  • Wash the chicken, and lay them on top of the onions and garlic. salt and pepper the chicken, and sprinkle the garlic powder on the chicken.
  • in a medium bowl, mix the soups, and the chicken stock. Now pour over the chicken. Put the lid on the pot, and cook on high for 1 hour,then turn the pot to low, and cook for 3 more hours. Check for tenderness, if the chicken is fork tender remove the chicken from the pot to a plate.
  • Mix the sour cream into the soups and stir till combined, add the parsley. If the sauce is too thin,at this point I take 1 tbsp of flour and add just a tiny bit of water to make a paste. Whisk the paste into the sauce, it should thicken right up. Return the chicken to the pot, and keep warm till ready to serve. I like to serve this with rice, or mashed potatoes, using the sauce as gravy. A side of veggies, and you have dinner..
