This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

Steps:
- 1. Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.
- 2. Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.
- 3. When done, taste and adjust seasonings as needed.
- 4. Garnish each serving with fresh cilantro.
