1- A roaster
2- A box of kosher salt

Steps:

  • - Remove entrails, clean and pat the roaster dry. - Season the bird with salt and pepper as you would normally. - Preheat the oven to 400 degrees. - Add one inch of salt to your roasting pan - Put the chicken "breast up" on the salt and cook for 1h 15min - Flip the chicken so it is now "breast down" and cook for another 55min
