CRISPY CURRIED COCONUT SHRIMP image

Number Of Ingredients 7

1 cup shredded, sweetened coconut flakes
1/2 cup Panko bread crumbs
2 T curry powder
1 1/2 tsp kosher salt
2 egg whites
1# shrimp, peeled & deveined
lime wedges for garnish

Steps:

  • In a food processor, pulse coconut until coarsely ground and transfer to shallow bowl. Mix coconut with bread crumbs, curry powder & salt and set aside. Beat egg whites until slightly foamy. Dip shrimp in egg white and coat with coconut mixture, Repeat to form double coating. Place shrimp on rack placed within a sheet pan. Bake for 10 minutes Garnish with lime wedges and serve.
