2 russet potatoes, cut into fries
1/3 cup masa flour
2 teaspoons cornmeal
2 teaspoons cajun seasoning
oil, to fry

Steps:

  • Peel and cut potatoes into fries. Soak in cold water until ready to use, but at least 10 minutes.
  • In a bowl or zip bag, combine masa flour, cornmeal and Cajun seasoning. Blend well.
  • Drain the potatoes but leave them wet.
  • Dip fries into the seasoning mixture and shake to coat.
  • Heat oil (375 deg.) in cast iron pan or deep fryer.
  • Cook fries in the hot oil for 7-10 minutes until golden brown.
  • Remove from fryer and drain on paper towels.
  • Season with salt.
