~ Creole Shrimp ~ image

I had a bag of thawed shrimp and some tomatoes I needed to use up. This dish was delicious over my Basmati rice. Just the right amount of spice. Quick and easy...what's not to like? Enjoy!

Number Of Ingredients 8

1 Tbsp butter + 2 tablespoons extra virgin olive oil
3 clove minced, garlic
1 lb med - large shrimp, peeled and deveined
2 tsp tony chachere's, creole or cajun seasoning
4 roma tomatoes, chopped
kosher salt & cracked black pepper
6 - 7 green onion, chopped
1/2 lemon squeezed

Steps:

  • 1. In a large skillet, melt butter with olive oil.
  • 2. Add the shrimp and cook until turning opaque.
  • 3. Add the Cajun seasoning, stir. Now, add salt and pepper to taste. Add the tomatoes and green onion, stir and simmer for 3 - 4 minutes. Squeeze the lemon over all, stir and serve over hot rice immediately. I served over my Saffron Basmati rice...was delicious!
