I had a bag of thawed shrimp and some tomatoes I needed to use up. This dish was delicious over my Basmati rice. Just the right amount of spice. Quick and easy...what's not to like? Enjoy!

- 1. In a large skillet, melt butter with olive oil.
- 2. Add the shrimp and cook until turning opaque.
- 3. Add the Cajun seasoning, stir. Now, add salt and pepper to taste. Add the tomatoes and green onion, stir and simmer for 3 - 4 minutes. Squeeze the lemon over all, stir and serve over hot rice immediately. I served over my Saffron Basmati rice...was delicious!
