CREOLE CORN SALAD image

Yield 1 Quart

Number Of Ingredients 13

1 cup.​Pan & grill oil
1 cup​Mayonnaise
1 ½ fl. Oz.​sour cream
¼ tbsp.​Minced fresh cilantro
1 toe​minced garlic
1/4 tsp.​Chili powder
1/8 tsp.​Ground black pepper
1/3 tsp.​Cayenne pepper
2 tbsp. ​juice of lime
1/8 cup​parmesan cheese
1 fl. Oz.​vegetable oil
1/4 tsp.​Kosher salt
6 each​whole corn

Steps:

  • Remove the husks and silk from the corn. Rinse and clean corn and allow to dry. Place whole corn on sheet pans and baste evenly on all sides with pan and grill oil. Place corn in a 450 degree convection oven and bake for 25 to 35 minutes or until golden brown. Allow to cool. Remove kernels from corn and thoroughly mix with remaining ingredients.
