Creole Cake image

Good old-fashioned Louisiana cake!

Number Of Ingredients 14

1 c sugar
2 eggs, lightly beaten
1/2 tsp cinnamon
1 1/3 c flour
1/4 tsp salt
3 Tbsp melted butter
2 oz melted chocolate
1/2 c milk
2 1/2 tsp baking powder
FROSTING:
2 Tbsp strong black coffee
1/2 tsp vanilla
2 Tbsp cocoa powder
1 c powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Gradually beat the sugar into eggs, add melted butter and chocolate.
  • 3. Sift flour, baking powder, salt and cinnamon twice.
  • 4. Add alternately with milk.
  • 5. Pour into 7 x 11 inch pan.
  • 6. Bake about 25 minutes. Cool and cover with Creole Frosting.
  • 7. FROSTING: Stir ingredients together. Pour over cooled caked.
