4 cups water
3~4 star anise
4 cloves of garlic, smashed
1/2 teaspoon ground white pepper
1/2 teaspoon black peppercorn
1/2 cup salt
1/4 cup honey
2 tablespoons pork fat, or oil for pan-frying
4~5 tablespoons Granulated sugar
Yellow mustard to serve
