1 Tbsp. olive oil
1 clove garlic, minced
dash crushed red pepper
1 pkg. (5 oz.) baby spinach leaves
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup roasted red peppers, drained, chopped
1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA, divided
3/4 cup KRAFT Shredded Parmesan Cheese, divided
1 ciabatta loaf (12 oz.)

Steps:

  • Heat oven to 375ºF.
  • Heat oil in large skillet on medium heat. Add garlic, crushed red pepper and spinach; cook 2 to 3 min. or just until spinach is wilted, stirring constantly. Remove from heat.
  • Mix cream cheese, roasted peppers, 1-1/2 cups mozzarella and 1/2 cup Parmesan in medium bowl until blended. Add spinach mixture; mix well.
  • Cut ciabatta loaf lengthwise in half. Remove bread from insides of both bread halves, leaving 1-inch-thick shells. Reserve removed bread for another use. (See tip.)
  • Fill bread shells with spinach mixture; place on parchment-covered baking sheet. Top with remaining mozzarella and Parmesan cheeses.
  • Bake 25 to 30 min. or until cream cheese mixture is heated through and tops are golden brown. Cool 5 min.
  • Cut each bread shell crosswise into 6 slices. Cut each bread slice crosswise in half, then diagonally in half to serve.
