Creamy Potato Salad with Eggs image

This is not a simple potato salad. My step father used to make it for us and it was the best potato salad I have ever had. I added a few of my own twists, I hope you like it :)

4 large potatoes
1 selery root
1 large parsnip
6-8 farm fresh eggs
1 stick sellery
1 green pepper, or any color
4 Tbsp mayonnaise
1 Tbsp deli brown or dijon mustard
1 tsp salt
1/2 bunch dill
1 large or 2 smaller onions
1 clove garlic or a bunch garlic chives from your garden
2 Tbsp bacon chopped or bacon bits

Steps:

  • 1. Peel and clean your veggies. In a large pot, cook the potatoes, celery root, parsnip until semi soft, make sure they are not falling apart or you will have mush. You can cook the eggs in the same water, or you can cook them separately. Let the veggies cool completely. While that is cooking fry up or bake some bacon slices and once cooled, chop them up finely.
  • 2. Dice all the vegetables, the cooked, the raw, peppers, onions, celery, chives and eggs (however small, or big your family likes it) The onion should be diced much smaller than the rest of the veggies. Also, Grate the garlic clove, unless your family likes big chunks of garlic in it. Chop half bunch of dill, add a little bit inside the salad and leave some for decoration. If you want to, you can also use a food chopper to chop the herbs, garlic and onions together and then just add that to the salad. Getting creative does not hurt :)
  • 3. Combine all ingredients in a large bowl. Add Mayonnaise, Mustard, salt and pepper to taste, the garlic chives, (leave some to sprinkle on top for decor... Add the chopped bacon. Yumm... and gently stir it all together. I add a little bit of red sweet Hungarian paprika and a dash of garlic powder. Once stirred and all ingredients are well blended together, put in a nicer big bowl, a decorative one if you have it, even out the surface with a spoon, spread a couple tablespoons of mayo on top, as if you were frosting a cake and decorate it with a couple of slices eggs, red, green, yellow peppers, the chopped chives, dill, or whatever you may think looks nice and colorful.
