Steps:
- 1. Prepare pasta according to package instructions. Drain, but do not rinse. 2. Meanwhile, combine parmesan, egg, cream, salt and pepper in a small mixing bowl. Stir egg mixture into drained, hot pasta. Cover to keep warm and set aside. 3. Bring a large pot of water to boil. Wilt the spinach in the boiling water. Add it all at once, stir and drain immediately. Perss as much liquid from it as possible, forming it into a disk. 4. Heat oil in a large saute pan over medium-high heat. Add garlic and pepper flakes and saute about 1 minute, stirring constantly. 5. Add the spinach and break it up with a spoon, stirring to coat with oil and garlic. Cook just until heated through, about 1 minute. Season with salt and pepper. 6. Transfer the pasta to serving dish. Top with sauted spinach. Garnish with additional grated parmesan and serve.
