Creamy New Potatoes and Spinach image

Want to increase spinach consumption at your house? Try serving it mixed with quartered new potatoes in a creamy, cheesy sauce. (And then add bacon.)

Number Of Ingredients 7

2-1/2 lb. new potatoes, quartered (7 cups)
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, cubed
1 cup milk
2 large shallots, finely chopped (about 1/2 cup)
4 cups loosely packed baby spinach leaves
3/4 cup KRAFT Finely Shredded Italian* Five Cheese Blend
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook potatoes in boiling water in large saucepan 15 min. or until tender.
  • Meanwhile, microwave Neufchatel, milk and shallots in microwaveable bowl on HIGH 2 to 3 min. or until Neufchatel is melted and mixture is hot, stirring after each minute.
  • Drain potatoes. Place spinach leaves in saucepan. Add potatoes, cream cheese sauce and shredded cheese; mix lightly. Transfer to shallow serving bowl; top with bacon. Serve immediately.
