Creamy Jerk Chicken Pasta image

A fusion of Jamaican jerk and Italian pasta finished with a creamy sauce.

Number Of Ingredients 16

chicken breasts, cut into small strips or cubes
Grace Caribbean Traditions Ginger, Garlic and Pimento Seasoning
Grace Jerk Seasoning
Penne Pasta, boiled and drained
Anchor Butter
garlic, minced
onion, chopped
escallion, chopped
heavy cream
salt
black pepper
Grace Whole Kernel Corn, drained
red sweet pepper, chopped
green sweet pepper, chopped
yellow sweet pepper, chopped
Anchor Cheddar Cheese, shredded

Steps:

  • Preheat oven to 180°C (350°F). Season chicken breast with Grace Caribbean Traditions Ginger, Garlic and Pimento Seasoning, and Grace Jerk Seasoning and put to bake or grill for 20 minutes. Cook Penne Pasta according to instructions on package; drain and set aside. Heat Anchor Butter and saute garlic, onion and escallion. Add chicken breast, heavy cream, salt and pepper and mix well. Fold in the pasta, Grace Whole Kernel Corn and sweet peppers; and stir well to combine. Sprinkle on the shredded cheddar cheese and serve immediately.To Serve: Serve with a garden salad and your favourite Grace Tropical Rhythms.Recipe developed by Angella Grandison-Reid
